Avocado smash

Serves 4

Ingredients:

  • 1 large avocado, mashed.

  • 1 cup frozen peas cooked and mashed.

  • 45 grams feta cheese, crumbled.

  • 1 cup baby spinach leaves, thinly sliced

  • Juice of 1 lemon

  • 2 tsp cumin

Method:

  1. Place all ingredients in a bowl and mix through thoroughly

  2. Enjoy on toast by itself, with an egg and some bacon or added to some fritters.

    Keep in fridge up to a week in an airtight container.
