Avocado smash
Serves 4
Ingredients:
1 large avocado, mashed.
1 cup frozen peas cooked and mashed.
45 grams feta cheese, crumbled.
1 cup baby spinach leaves, thinly sliced
Juice of 1 lemon
2 tsp cumin
Method:
Place all ingredients in a bowl and mix through thoroughly
Enjoy on toast by itself, with an egg and some bacon or added to some fritters.
Keep in fridge up to a week in an airtight container.
