Indulgent chocolate cake

Serves 12

Ingredients:

  • 2 cups plain flour, sifted

  • 1 cup caster sugar

  • 1 cup raw sugar

  • 2 eggs

  • 3/4 cup cocoa powder

  • 2 teaspoons baking powder

  • 1 teaspoons bicarb soda

  • 2 teaspoons vanilla extract

  • 1 cup almond milk unsweetened

  • 1 cup boiling water (use last)

  • 1/2 cup unrefined coconut oil, melted

  • 1 teaspoons salt

Method:

  1. Preheat oven to 180 degrees Celsius, fan-forced then spray two 20 cm cake pans with olive oil, set aside.

  2. In a stainless steel bowl, mix all the dry ingredients together and mix thoroughly, set aside.

  3. In a separate bowl mix all wet (except the boiling water) ingredients. Once mixed thoroughly pour mixture into dry ingredients and mix again. Then add boiling water and combine well. Cake batter will appear thin but this is correct as the boiling water will give the cake a moistness.

  4. Divide cake batter evenly between the two pans and bake for 45 minutes or until cake tester comes out clean.

  5. Remove from oven and allow to cool in pan for around 20 minutes, then remove the cake from the pan and let allow to cool completely before icing.  

Icing for cake                                                             

Ingredients:

  • 250 grams Philadelphia cream cheese original

  • 1 cups icing sugar

  • 1 tablespoon cocoa powder

Method:

1.  With an electric mixer, whisk cream cheese until smooth. Add sugar slowly making sure mixture is combing well then add cocoa powder, beat all ingredients together until smooth.

Before icing

1.     To make the first layer of cake (bottom cake) flat, take a bread knife and slice the top round off cake carefully. Set aside.

2.   With a tablespoon, spoon some icing contents in the middle of a cake stand (to stop cake moving) then add first layer of cake. Spread icing mixture on top of first cake (cream icing in between the layer).

3.   Then take the second cake and place on first layer of cake. Start spreading rest of icing mixture, starting from the top of cake and spreading towards the edge. Then get a spatula to decorate a smooth desirable pattern around it to your liking. Sprinkle with flaked chocolate if desired.

4.  Serve.
