Vanilla, Medjool balls of happiness
Looking for a little piece of sweet happiness to pop in your mouth with your favourite beverage. Why not try these vanilla Medjool balls? They are great to have with a cuppa or as a small treat after dinner. There's an added bonus, they're really simple and easy to make.
Ingredients:
- 8 Medjool dates
- 2 cups shredded coconut
- 1 & ½ cups almond meal
- 1 & ½ tablespoons honey
- 1 Tablespoon vanilla extract
- 1/3 cup coconut oil, melted
- 3 Tablespoons water
- ½ cup desiccated coconut, for dusting
Method:
- Place all ingredients, except the desiccated coconut, into a food processor and process until well combined and starting to form a ball around the blade.
- In the mean time in a small separate bowl place in desiccated coconut.
- Roll the sticky mixture into small balls and then roll into desiccated coconut coating evenly.
- Place vanilla, Medjool balls into an airtight container and store in fridge or freezer.
