Coconut chocolate cubes of deliciousness

Equipment:
- Food processor
- spatual
- Large mixing bowl
- jug with lip
- ice cub tray
Ingredients:
- 1 cup coconut oil, melted
- ¼ cup rice malt syrup
- ½ cup cocoa powder
- ½ cup desiccated coconut
- ¼ cup currants
- ½ cup unsalted, roasted cashews
- ¼ cup almonds
- ½ cup pitted dates
Method:
- In a smaller food processor process cashews, almonds and dates until crushed finely, then remove into a large separate bowl.
- In the same food processor place coconut oil, rice malt syrup and cocoa powder and pulse for 1 minute until mixture is combined, smooth and glossy.
- Pour glossy chocolaty liquid into the nut and fruit mixture. Combine thoroughly then add in currants and coconut.
- Carefully pour liquid into a jug with a lip, then pour chocolaty liquid into an ice cube tray.
- Set in the freezer for around 20 minutes or until solid.
- Enjoy with your favourite beverage!
