Protein Truffles
Makes 26
Ingredients:
- 250 grams mixed almonds, walnuts, cashews, and macadamias
- 1 & ½ tablespoons cocoa powder
- 2 tablespoons wholemeal flour
- ¼ teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 25 pitted dates, whole
- ¼ cup water
- ½ cup desiccated coconut
- ¼ cup shredded coconut for rolling
Method:
- Place nuts, cocoa, flour, cinnamon and dates into a food processor and process for around 30 seconds.
- Add vanilla, coconut and a little water and process until all ingredients are combined and mixture feels pliable.
- Take out of food processor and place into a bowl.
- Form into 26 balls.
- Roll the balls into shredded coconut, extra cocoa, or drizzle with melted chocolate.
- Enjoy with your favourite beverage!
