Protein Truffles

Makes 26

Ingredients:

  • 250 grams mixed almonds, walnuts, cashews, and macadamias
  • 1 & ½ tablespoons cocoa powder
  • 2 tablespoons wholemeal flour
  • ¼ teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 25 pitted dates, whole
  • ¼ cup water
  • ½ cup desiccated coconut
  • ¼ cup shredded coconut for rolling

Method:

  1. Place nuts, cocoa, flour, cinnamon and dates into a food processor and process for around 30 seconds.
  2. Add vanilla, coconut and a little water and process until all ingredients are combined and mixture feels pliable.
  3. Take out of food processor and place into a bowl.
  4. Form into 26 balls.
  5. Roll the balls into shredded coconut, extra cocoa, or drizzle with melted chocolate.
  6. Enjoy with your favourite beverage!
